298mm chef

This is quite a big chef knife, the material and grinding are very thin however and it handles like a smaller knife as its so light- all up it only comes to 261g. Blade is stainless nitro v at 58hrc and measures 68mm tall at the heel and 298mm in length, 2.6mm thick at the spine. Handle is stabilised zebrano with a paper micarta bolster and a domed stainless pin. The handle shape is a very pleasing thing in the hand. Balance point is 45mm forward of the bolster, perfect for a pinch grip.
