nitro v nakiri
The blade is 160mm x 50mm, and is 2.5mm thick. Made from stainless nitro v steel. Rounded spine nose and heel. The edge on this knife is literally razor thin amd needs to be treated with care- after being ground and hand sanded to zero it has been waved over a 2000 grit stone and leather strop leaving an extremely fine and sharp edge. Nakiri are a specialist kitchen knife for vegetables. Harsh use will result in damage to the edge. Handle is semi octagonal / modified wa style from stabilised afzelia xlay timber with a brass spacer and pin.
