280mm chef
I have been playing with this handle design on paper for a while and am thrilled to have finally produced this result, it really is lovely to hold.
The blade is from 15n20 carbon steel and is 3mm at the spine with a mostly flat geometry. Carbon steel may not be as tough as stainless and may not maintain an edge like the top stainless blades - but it is such a pleasure to sharpen comparatively and the beautiful patina you can grow over the years is just not available with stainless. I have added some distal taper along the length and the result is a blade that slices amazing at the heel and like magic at the tip.
